Gingerbread Pancakes

I love this recipe so I wanted to share it with everyone else.
I love the lemon sauce on top of the pancakes in place of Maple Syrup. YUM!

Gingerbread Pancakes
Heat griddle to 350 Degree's
1 1/3 Cup Flour
1 Tsp Baking Powder
1/4 Tsp Baking Soda
1/4 Tsp Salt
1/2 Tsp Ginger
1 Tsp Cinnamon
1 Egg
1 1/4 Cup Milk
1/4 Cup Mollasses
3 Tbsp Vegetable Oil
Whisk until well blended.

Lemon Sauce
1/2 Cup Sugar
1 Tbsp Corn Starch
Pinch of Nutmeg
1 Cup Hot Water
2 Tbsp butter
1/2 Tsp Lemon Rind
2 Tbsp Lemon Juice
In pan mix Sugar, cornstarch, and nutmeg. Gradually Stir in hot water. Stir over medium heat until it turn thick and clear.
Add butter, Lemon Rind, and Lemon Juice. Stir until butter melts. Serve hot.
